Slow-Cooker "Corned" Waseda Sirloin Tip Roast

GF Slow-Cooker "Corned" Waseda Sirloin Tip

Prep time: 15 mins | Cook time: 7–8 hours (Low) | Serves: 4–6

1. The DIY GF Pickling Spice Rub

Mix these together in a small bowl:

  • 1 tbsp Kosher Salt
  • 2 tbsp Whole Mustard Seeds
  • 1 tbsp Black Peppercorns (cracked slightly)
  • 1 tsp Ground Coriander (or whole seeds)
  • 1 tsp Red Pepper Flakes
  • 1 tsp Ground Ginger
  • 2 Bay Leaves (crumbled)
  • 1/2 tsp Ground Allspice (or Cloves)

2. The Main Ingredients

  • 3–4 lb Waseda Farms Sirloin Tip Roast
  • 3 cups Gluten-Free Beef Broth
  • 1 tbsp Apple Cider Vinegar
  • 1 tsp Gluten-Free Worcestershire Sauce (e.g., Lea & Perrins)
  • 1 lb Baby Potatoes (halved)
  • 3 Large Carrots (peeled and cut into 2-inch chunks)
  • 1 Small head of Cabbage (cut into 6–8 wedges)

3. Preparation Instructions

  1. Prep the Roast: Pat the Waseda Sirloin Tip dry. Firmly rub the DIY Spice & Salt mixture all over the surface of the meat, pressing the seeds in so they stick.
  2. Layer the Pot: Place the potatoes and carrots in an even layer at the bottom of a 6-quart slow cooker. Set the seasoned roast directly on top of the vegetables.
  3. Mix & Pour Liquid: In a separate bowl or measuring cup, whisk together the GF Beef Broth, Apple Cider Vinegar, and GF Worcestershire Sauce.
  4. Add to Pot: Carefully pour the liquid mixture down the side of the slow cooker.
    Note: Do not pour the liquid directly over the beef, or you will wash the spices off into the broth.
  5. Slow Cook: Cover and cook on Low for 7–8 hours.
  6. Tip: Because grass-fed sirloin is leaner than brisket, the "Low" setting is essential for a tender result.
  7. Add Cabbage: About 45 minutes before serving, tuck the cabbage wedges into the liquid surrounding the beef. Cover and finish cooking.
  8. Rest & Slice: Remove the beef to a cutting board and let it rest for 10 minutes. Look for the direction of the muscle fibers (the "grain") and slice thin, perpendicular (against) the grain for maximum tenderness.

Serving Suggestion

Serve the sliced beef on a platter surrounded by the vegetables. Drizzle a few spoonfuls of the concentrated cooking liquid over the meat to keep it moist.
