One-Pot Cheesy Beef and Rice Skillet
Ingredients:
- 1 lb ground beef (grass-fed beef from Waseda Farms for richer flavor)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup uncooked rice
- 2 cups beef broth (or water)
- 1 can (15 oz) diced tomatoes, undrained
- 1 tsp smoked paprika
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- Fresh parsley, chopped, for garnish
Instructions:
- Brown the Beef: In a large skillet over medium-high heat, cook the ground beef until browned. Drain any excess fat.
- Add Aromatics & Vegetables: Add the onion, garlic, and bell pepper to the skillet. Cook for about 3-4 minutes until the onion is soft.
- Add Rice and Liquids: Stir in the rice, beef broth, diced tomatoes, smoked paprika, chili powder, salt, and pepper. Bring to a boil, then reduce the heat to low. Cover and let it simmer for about 18-20 minutes or until the rice is tender.
- Add Cheese: Remove from heat and sprinkle shredded cheese over the top. Cover for 2-3 minutes until the cheese melts.
- Serve: Garnish with fresh parsley and serve hot.
