One-Pot Cheesy Beef and Rice Skillet

Ingredients:

  • 1 lb ground beef (grass-fed beef from Waseda Farms for richer flavor)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup uncooked rice
  • 2 cups beef broth (or water)
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Brown the Beef: In a large skillet over medium-high heat, cook the ground beef until browned. Drain any excess fat.
  2. Add Aromatics & Vegetables: Add the onion, garlic, and bell pepper to the skillet. Cook for about 3-4 minutes until the onion is soft.
  3. Add Rice and Liquids: Stir in the rice, beef broth, diced tomatoes, smoked paprika, chili powder, salt, and pepper. Bring to a boil, then reduce the heat to low. Cover and let it simmer for about 18-20 minutes or until the rice is tender.
  4. Add Cheese: Remove from heat and sprinkle shredded cheese over the top. Cover for 2-3 minutes until the cheese melts.
  5. Serve: Garnish with fresh parsley and serve hot.
