🍏 Cider-Glazed Herb Pork Roast

🛒 What You’ll Need:

  • 1 boneless pork roast from Waseda Farms (about 2–3 lbs)

  • 2 tbsp olive oil

  • Salt + pepper

  • 4 garlic cloves, minced

  • 1 tbsp chopped rosemary

  • 1 tbsp thyme leaves

  • 1 onion, sliced

  • 2 apples, sliced

  • 1 ½ cups apple cider (the real kind!)

  • 2 tbsp Dijon mustard

How to Make It:

  1. Preheat oven to 325°F.

  2. Rub roast with olive oil, salt, pepper, garlic, rosemary, and thyme.

  3. Sear in a hot pan until golden brown on all sides (about 3 minutes per side).

  4. In a roasting pan or Dutch oven, layer onions and apples.

  5. Mix cider and mustard, pour over the top.

  6. Place roast on top, cover, and bake for about 2.5–3 hours until fork-tender.

  7. Optional: Pour juices into a pan and simmer to thicken into a sweet, herby glaze.
