Honey collected in July from clover blooms has a delicate, mild sweetness, while August honey from goldenrod and alfalfa blooms carries a more robust flavor. To collect the honey, Fox Honey Farm gently removes the honeycomb frames, uncaps the comb with hot knives, and places them in a honey extractor. The extractor spins the frames, allowing the honey to flow out without disturbing its natural properties.
Unlike many commercial honeys, Fox Honey Farm avoids filtering or pasteurizing, preserving all the beneficial properties of raw honey—enzymes, pollen, propolis, and tiny bits of beeswax.
